Noted plastic and one metal container in clean utensil area that had sticker residue on it. Onion chopper in clean storage with dried debris on the blade. Food contact surfaces shall be clean to sight and touch. Make line thermometer in storage area had food residue on them. CDI by placing them in the dish area.
4-602.12 Cooking and Baking Equipment (C)-Address encrusted grease along corners of metal sheet pans. These may need to be soaked with degreasing detergent.

Food using TPHC shall be labeled as written in the approved procedures. Manager was unsure of the time items were brought from cold holding, so all items discarded for correction. Items brought to the line had a new sticker made to display. |

4-501.11 Good Repair and Proper Adjustment-Equipment - C -- Equipment shall be maintained in good repair and components such as doors, seals, hinges, fasteners, and kick plates shall be kept intact, tight, and adjusted in accordance with manufacturer's specifications. Observed rust & peeling on shelving in the walk-in cooler. Adjust temp. on walkin cooler to meet 41F or less requirement. (TCS foods were being held inside the two reach-ins during inspection and technician was working on the walk-in cooler). Walk-in cooler door handle has a missing component and does not latch. Interior of door is beginning to rust. Continue to tighten & re-attach baseboard and metal flashing on outside of walkin cooler. Door to walkin freezer did not close tightly. Adjust accordingly so that gasket is tight fitting to door. Floor in walkin freezer is bowed and fan covers are rusting. Address ice buildup in interior of walkin freezer. Paint is chipping inside of reach-in ice cream freezer. Multiple pieces of equipment have sections that are no longer working properly or in use. Freezer part of fry station is marked as "not in use." Bottom refrigeration of reach-thru is used only for bag storage, and Bev-air refrig. at front is labeled as "not in use" and PIC reported that maintenance is searching for parts. Bottom of main make-line refrigeration section is labeled as "not in use." Replace top gasket on Randell cooler where gasket is split. Bottom interior of this unit is dented & no longer smooth, easy to clean & bottom door is not flush with refrigerator when closed. Adjust door to address this.. Re-attach loose grate on main make-line. White upper piece inside of microwave is loose. One leg on shelf in dry goods is bowed & needs repair. Wood prop was added to one foot of 3 comp. sink. Replace this with appropriate piece of foot for equipment. Defrost chest freezer at flat-top where significant ice buildup was noted. Several metal rectangular and cylinder shaped pans are severely dented along interior corners, making them no longer smooth, easy to clean. |

Physical facilities shall be cleaned as often as necessary to keep them clean. 6-501.11 Repairing-Premises, Structures, Attachments, and Fixtures-Methods (C)-Address any receding grout along floor and baseboard tiles throughout kitchen. Mop sink should be regrouted where grout has receded. Address few cracked tiles at fry station and re-grout where needed in women's restroom flooring. Raise drain lines in storage room for ice machine so they are at least 6 inches above the floor for easy floor cleaning. Re-seal/replace wood on wall in mop room where damaged. 6-202.19 Outdoor Walking and Driving Surfaces, Graded to Drain (C)-Noted several deep pot holes in parking area collecting water. Exterior walking/driving surfaces shall be graded to drain. 6-501.114 Maintaining Premises, Unnecessary Items and Litter (C)-Remove any equipment or items that are no longer used. Address equipment that is not in use throughout (ideally replace each piece where needed) or if determined no longer needed, remove from facility. |
