Discussion with person-in-charge indicated these items had been taken from the walk-in freezer earlier that morning and were thawing. Corrected during inspection - food dated according to thaw date.
All ready-to-eat, potentially hazardous (time/temp control for safety) foods that are prepared or opened on site and held for more than 24 hours shall be dated with an opening date, expiration date, OR to reflect a shelf life of 7 days if held at 41 degrees or below, 4 days if held at 45 degrees or below. |

Replace with approve storage racks. Nonfood-contact surfaces shall be free of unnecessary ledges, projections, and crevices, and designed and constructed to allow easy cleaning and to facilitate maintenance. REPEAT.
4-501.11 Good Repair and Proper Adjustment-Equipment - C - Observed rust on the ceiling of walk-in cooler, walk-in freezer door no longer seals properly (causing significant ice-build up), walk-in freezer & cooler floors are pitted/damaged, and make shift shelf under 3-compartment sink is damaged. Repair or replace all items. Equipment shall be maintained in good repair. REPEAT. |
