5-205.11 Using a Handwashing Sink - Operation and Maintenance (Pf) - Upon arrival, EHS observed ice in the handwash sink. PIC said someone has dumped a drink out. Handwash sinks are for handwashing only and should be used for no other purpose.
CDI: PIC removed the ice from the sink and educated staff on where to dump ice. |

4-501.114 Manual and Mechanical Warewashing Equipment, Chemical Sanitization - Temperature, pH, Concentration and Hardness (P) - EHS tested a sanitizer bucket in the kitchen and it tested at 0 ppm chlorine. All chlorine sanitizers should be maintained between 50-200 ppm chlorine at all times. EHS suggests testing the sanitizer concentration every 4 hours and remaking sanitizer bucket when they get dirty or drop below 50 ppm chlorine.
CDI: PIC remade the sanitizer bucket to proper concentration. |

3-501.17 Ready-To-Eat Time / Temperature Control for Safety Food, Date Marking (Pf) - EHS observed multiple containers of ready to eat, temperature controlled for safety foods in the prep unit that far exceeded a 7 day hold. EHS observed sliced turkey and sliced cheese in the 2 door fridge with a date marking exceeding a 7 day hold. EHS observed lasagnas, that were made yesterday, with the incorrect date marking on it. Ready to eat, TCS foods can be stored for 7 days total (day 1 is day of prep + 6 days). At the end of the 7 day hold, ready to eat TCS foods should be discarded.
CDI: EHS showed PIC the date markings and PIC voluntarily discarded the items. |

7-102.11 Common Name - Working Containers (Pf) - EHS observed both chlorine sanitizer buckets labeled only as "sanitizer". When transferring chemicals from a bulk supply, a common name label should be added to the working container e.g. Bleach Sanitizer.
