3-501.15 Quickly cool foods. Use open/vented shallow pans, large ice baths, and active stirring methods. Cold air must flow around the product to remove the heat. Pf Observed chicken just thawed placed in cooler drawer reading 55-56F. When asked, PIC said it was just placed in from thawing. Cooler drawers are not meant to cool foods but to hold at the temp placed in due to reaching in and out. Chicken placed in walk in to cool by PIC. |
