3-501.18 Ready-To-Eat Time / Temperature Control for Safety Food, Disposition (P) Observed a bulk container of prepped slaw that contained a date marking label of 4/1/2026. Discard the food requiring date labels once the time/temperature window has expired, if it is not labeled, or if the label is incorrect. PIC stated that the container was prepped yesterday and EHS confirmed with another date marking label indication on the container. Make sure employees are removing date marking labels from previous use and are properly cleaning/sanitizing the bulk containers in between use. |

Keep dumpster and other outside waste handling containers for refuse, recyclables, and returnables covered with tight-fitting lids or doors. One of the top doors on garbage receptacle was missing and in bad repair. Contact waste company that the facility uses to get a receptacle replacement. REPEAT. |

Observed grease build up on wall behind fryers and under/behind the yellow pipe/gas line. Clean walls beside prep sink and sanitizer side of 3 comp sink, observed splatter. Clean the floor in front of walk-in unit doors from food buildup. REPEAT. |
