Observed ice scoop down in the ice of the ice machine. Also observed the tongs for the lettuce with handle touching the food. All in use utensils shall be stored in food with the handle sticking out. CDI-manager moved utensils so handle was no longer touching the food. |

Observed employee manually washing dishes with wash water at 105F in the booster heater compartment of 3 compartment sink. While actively washing dishes the water temperature shall be maintained at 110F. CDI-employee drained wash sinks and ran hot water that temped at 112F. |

Observed the 2 door reach in freezer with glass doors with torn gasket. Also observed the walk in to the right of the glass doors with mildew accumulation on the gaskets. All gaskets shall be maintained clean and in good repair. |
