Observed damaged wall in the walk in cooler.
Equipment shall be maintained in a state of good repair and condition.
4-202.16 Nonfood-Contact Surfaces (C)
Observed paper towels lining the shelving of the chicken display coolers and cardboard boxes lining shelving in the walk in cooler.
Nonfood-contact surfaces of equipment that are exposed to splash, spillage, or other food soiling or that require frequent cleaning shall be constructed of a corrosion-resistant, nonabsorbent, and smooth material.
**paper towels and cardboard are absorbent materials and shall not be used to line shelving unless consistently changed out when it becomes soiled.**
**EHS was informed that the chicken coming in the packages is leaking chicken juice onto the shelving so they are trying to keep the shelving from leaking by putting paper towels down to absorb the chicken juice. EHS stated concern of chicken juice causing cross contamination** |
