Observed paper towels being used to line the inside of a storage unit on the cart.
Nonfood-contact surfaces of equipment that are exposed to splash, spillage, or other food soiling, or that require frequent cleaning, shall be constructed of corrosion-resistant, nonabsorbent, and smooth materials.
The owner was advised to use an easily cleanable barrier, such as wax paper, parchment paper, or another approved food-grade nonabsorbent material, in place of paper towels. |
