FOOD SHALL BE PROTECTED FROM CROSS CONTAMINATION BY SEPARATING TYPES OF RAW ANIMAL FOODS FROM EACH OTHER DURING STORAGE, PREPARATION, HOLDING, AND DISPLAY BY ARRANGING EACH TYPE OF FOOD IN EQUIPMENT SO THAT CROSS CONTAMINATION OF ONE TYPE WITH ANOTHER IS PREVENTED.
Observed cooked chicken being stored in a box lined with a blue plastic liner. Manager verified the box had previously contained raw chicken, which had been stored inside a clear bag prior to removal from the box. Manager further stated the box was relined with a blue food-safe plastic liner before the cooked chicken was placed back into the box. EHS coached the Manager that boxes previously used to store raw chicken cannot be reused for
ready-to-eat or cooked food items due to the risk of cross contamination, as the box material cannot be properly cleaned and sanitized.
Employee removed the cooked chicken from the box. CDI. |
