During pauses in food preparation or dispensing, all in-use utensils shall be stored: in food with their handle above the top of the food; on a surface that is cleaned and sanitized at least every 4 hours or in a clean, protected location if the food is not potentially hazardous.
Observed 2 pairs tongs stored hanging off the handle of the oven. EHS recommends to store the tongs in a clean pan to prevent contamination from an employee's uniform pant touching the tongs.

PHYSICAL FACILITIES shall be maintained in good repair.
Peeling paint observed in the women's restroom ceiling. Discolored ceiling tiles observed in the kitchen. Repaint/replace ceiling/tiles as needed. Repair/replace damaged carpet in dining room. Replace blown bulbs throughout as needed. Re-caulk hand wash sink in the kitchen and tighten the knob.
