4-601.11 (A) Equipment, Food-Contact Surfaces, Nonfood-Contact Surfaces, and Utensils - P - Observed that the majority of the metal pans (all sizes) on the clean dish shelves were soiled with residue & debris despite being stacked as clean. Majority of these dishes are no longer being used - recommend cleaning items, then removing from premises. Also observed residue on the can opener.
Corrected during inspection (CDI) - Person in Charge was in the process of moving all items to the dish area to be rewashed. Once pans are cleaned, recommend wrapping those that will not be used to ensure they stay clean. Maintain dishes in clean condition.
Food contact surfaces shall be clean to sight & touch. REPEAT but improved from last inspection - continue monitoring the condition of the dishes. |

4-501.11 Good Repair and Proper Adjustment-Equipment - C - Observed rust in the 2 door freezer, the walk in freezer is not working, rust on the spice shelves, equipment is propped up with crates or plates in the front service area & the cook line, observed shelving in the front service area propped up with a wire rack, observed degraded caulking under the pass window (where it meets the wall) on both sides, degraded caulking around the bar top & behind all handwashing sinks, & observed the order rail over the grill held together with tape. Repair or replace items. Remove unused, non-working equipment.
Equipment shall be maintained in good repair.
4-101.19 Nonfood-Contact Surfaces - C - Observed exposed wood under the bar counter & used as a shelf along the back of the bar. Replace or make non-absorbent.
Nonfood-contact surfaces of equipment that are exposed to splash, spillage, or other food soiling or that require frequent cleaning shall be constructed of a corrosion-resistant, nonabsorbent, and smooth material.
4-205.10 Food Equipment, Certification and Classification - C - Observed a household use freezer being used for storage until walk-in freezer is repaired.
Except for toasters, mixers, microwave ovens, water heaters, and hoods, food equipment shall be used in accordance with the manufacturer’s intended use and certified or classified for sanitation by an ANSI-accredited certification program. |

4-602.13 Nonfood Contact Surfaces - C - Observed soil & residue built up on the sides, legs, & backs of equipment. This includes, but is not limited to, the salamander (broiler), the char grill & flat grill, the oven, the fryers, & the small warmer. Observed soil & residue build up on the spice shelves; on the doors, gaskets & the interior of the 2-door freezer, interiors of unused coolers throughout facility, gaskets throughout facility (particularly the walk in cooler door), clean dish shelves, knobs of the handwashing sinks, & on cooler handles throughout facility. Observed discoloration in the caulk behind 3-comp sink & the back handwashing sinks. Clean or replace caulking if damaged. Clean areas. REPEAT.

6-501.11 Repairing-Premises, Structures, Attachments, and Fixtures-Methods - C - Observed that the floor of the walk in freezer has buckled & needs to be resecured. Observed there are several lights out in the kitchen - particularly by the clean dish shelves & the handwashing sink near the breading station. It appears that the lights in the walk in cooler may have partially burned out or need to be replaced with brighter bulbs. Reattach floor, replace bulbs. Observed missing grout throughout the facility - repair floors to make easier to clean. Observed a missing tile in the corner of the front service area, missing base tiles in several areas of the kitchen, & loose base tiles along the dish room wall. Observed corroded metal grid in the ceiling of the mop room, numerous water damaged ceiling tiles & light fixtures & a damaged light socket under the hood where the ovens are. Repair items.

6-501.12 Cleaning, Frequency and Restrictions - C - Observed soil & residue on the cameras in the kitchen, around ceiling vents, at the edges of the floors, under & in front of equipment, & on the walls throughout the kitchen. Clean areas.
Physical facilities shall be cleaned as often as necessary to be kept clean. REPEAT.
6-501.113 Storing Maintenance Tools - C - Observed numerous items on the floor in the backroom where cleaning equipment & chemicals are stored. Obtain additional hangers & shelves for equipment to get it off the floor & arranged to faclitate cleaning. REPEAT.
6-501.114 Maintaining Premises, Unnecessary Items and Litter - C - Facility is now a catering facility only - remove unnecessary equipment & clean premises thoroughly. REPEAT.
