3-501.16 (A) (2) and (B) Time / Temperature Control for Safety Food, Hot and Cold Holding (P) Single door upright refer with ambient temperatures of 44F on inside thermometer. Salads and milk in unit are 45F. Salads were just prepared this morning. All TCS foods were moved to WIC. PIC is to monitor temperature for the remainder of the day and if ambient temperatures stay above 38F, repair is needed. Revisit for verification on Friday 4/10.
