3-501.19 Time as a Public Health Control (P) sliced cheese on prep line being held on time. Time on clock was ~10:10am and time on sliced cheese relayed discard time at 9:25 am. After time is expired, cheese should be discarded. When new cheese is placed out, new time stamp should be placed on container. CDI-cheese and stamp changed |

7-204.11 Sanitizers, Criteria - Chemicals (P) Establishment using pre-mixed disinfectant cleaner to clean surfaces throughout establishment. This product is not to be used. ONLY sanitizer is to be used on surfaces thoughout establishment. Disinfectant is too strong to use anywhere but restrooms. Discontinue use in kitchen and dining room. Inspector advised to use a clean spray bottle, and fill with sanitizer (red solution) from wall unit at 3 compartment sink. CDI-PIC discontinued use immediately |
