3-501.16 (A) (2) and (B) Time / Temperature Control for Safety Food, Hot and Cold Holding (P). A few items in a small lowboy cooler were holding over 41F. All TCS foods shall be maintained at 41F. CDI- Foods were recently placed in the unit for breakfast and were moved to the WIC for cooling. The unit was reset and ambient temperature was verified at 41F. |
