3-501.15 Quickly cool foods. Use open/vented shallow pans, large ice baths, and active stirring methods. Cold air must flow around the product to remove the heat. Three pans of beans cooked and cooled the day before were 44F to 48F and were voluntarily discarded. Beans did not meet cooling parameters of 135F to 70F within 2 hours and to 41 within a total of 6 hours. Always monitor foods when cooling to ensure meeting cooling parameters above. Recommend using ice water bath for beans. Also beans were in large containers and tightly covered. |
