3-501.19 (B)(3)(5) Time as a Public Health Control (P) - Ham that was out of temperature control was not discarded at the end of the 4 hour period and was wrapped and stored in the walk-in cooler. The discard times on the lettuce, cheese, and tomatoes were not accurate according to their procedure, and the labels exceeded their 4 hour hold time. Food employee changed labels to the next 4 hours period but didn't discarded the food. If time without temperature control is used as the public health control up to a maximum of 4 hours, the food shall be cooked and served, served at any temperatures if ready-to-eat, or discarded, within 4 hours from the point in time when the food is removed from temperature control.The food in unmarked containers or packages, or marked to exceed a 4-hour limit, shall be discarded. CDI - PIC discarded the ham, and the food employee wrote the correct time on the lettuce, cheese, and tomatoes and replaced the old containers. |

4-501.11 Good Repair and Proper Adjustment - Equipment (C) REPEAT with prior improvements - Minor ice buildup along walk-in freezer door (on the inside of the walk-in cooler). Ice machine panel is missing on the front. The ice bin at the drive-thru needs to be adjusted to slide properly. Gasket taped up on the 1-door freezer near the fryer station. The door latches is missing in the walk-in cooler and walk-in freezer. Equipment shall be maintained in good repair.
